Polysaccharides 2
Cellulose forms the cell walls in plant cells. Cotton is
cellulose. Even though starch and cotton are polysaccharides, humans cannot eat
cotton. This is due to the 3D structure of cellulose. Humans don't have the enzymes to
break apart the cellulose molecule. The enzymes of the bacteria that live in the
intestinal tracts of cows, deer, and other animals can break down cellulose, so these
animals eat cellulose and convert it into products they can digest.
