LEAVES OF CINNAMON Cinnamon Cinnamomum zeylanicum comes from Ceylon and is valued for its aromatic spice. The plant is a tree about ten metres high and the spice is prepared from cut stems which have had their leaves and twigs removed. The outer covering of the stems is stripped off and it yields an aromatic oil used in scents and as a flavouring. The bark is also dried for use as a spice. [CH] {FW}
