KNAPWEEDS Star Thistle Centaurea jacea is a European species that has become established in North America and grows in fields and by roadsides. The flowering heads are made up of just tube-like disk-florets with no strap-like ray-florets. The outer florets are larger than those in the centre of the head and in some species these outer florets are sterile. The star-thistles or knapweeds do not have prickles as some other thistles do.
