Flounder
The flounder, sole and plaice are all flatfish. Skates and rays are also commonly referred
to as flatfish, however they are flattened from top to bottom, whereas those fish belonging to the family
Pleuromectidae and Soleidae are flattened from side-to-side. The physiological changes in a side-to
side flattening are much more complicated. Many of these species have both eyes and mouth on one
