Lobster is a well enjoyed, popular seafood. The lobster which are harvested in the waters off the eastern coast of North America are the specific species of lobster "Homarus americanis". These lobsters often weigh more then 11 kg (25 lbs). The lobsters which are harvested in Europe are generally much smaller. In Europe the species of lobster which is eaten is "Homarus gammarus".
